Ingredients
  

  • 1/4 cup Riced Cauliflower frozen
  • 1/2 cup Peas frozen
  • 1-3 Medjool Dates
  • 1-2 cups Oat Milk or plant based milk of choice
  • 1/2 Avocado
  • 1/4 tsp Peppermint Extract
  • 1/4 tsp Vanilla Extract
  • Vegan Whip Cream Optional for topping
  • Cherries Optional for topping

Method
 

  1. Start by pitting the Medjool Dates and soaking them in warm water for five minutes to soften.
  2. After soaking, drain the dates and add them to a blender with the frozen cauliflower, frozen peas, and avocado.
  3. Pour in one cup of oat milk along with the peppermint extract and vanilla extract.
  4. Blend the mixture on high until smooth and creamy; add more oat milk if needed to adjust the thickness.
  5. Once blended, taste and adjust sweetness by adding more Medjool dates if necessary.
  6. Pour your shake into a glass and consider topping it with vegan whip cream and cherries.
  7. Serve immediately and enjoy the refreshing taste of spring!
