Ingredients

  • 1 wrap flavored wrap or tortilla I used spinach
  • ½ cup hummus I used my roasted red pepper hummus
  • 2 slices cucumber thinly sliced lengthwise
  • handful fresh spinach leaves
  • 2 slices cocktail or campari tomatoes sliced
  • ¼ avocado sliced
  • to taste alfalfa or broccoli sprouts
  • to taste microgreens

Equipment

  • Baking Sheet
  • Chef's Knife

Method

  1. Start by laying your flavored wrap flat on a clean surface or a large plate. It’s important to have enough space to work so that you can easily spread the hummus.
  2. Take your hummus and spread it on the bottom of the wrap. Make sure to spread it about ½ inch from the bottom edge, and extend it to the sides. This ensures that each bite will be filled with that delicious, creamy hummus.
  3. Next, layer the cucumber slices evenly across the hummus. The key here is to distribute them well so that every bite has some crunch.
  4. Now, add the handful of fresh spinach leaves. They not only add a lovely green color but also contribute essential nutrients.
  5. Follow that with the slices of tomatoes. Their juicy sweetness will complement the other ingredients perfectly.
  6. Next, place the avocado slices on top. The creaminess of the avocado pairs beautifully with the crunchiness of the veggies.
  7. Now it’s time for the sprouts! Scatter a handful of alfalfa or broccoli sprouts on top for that added crunch.
  8. To finish, sprinkle some microgreens over the top. They not only look beautiful but bring a burst of flavor.
  9. Once all your ingredients are layered, it’s time to fold the wrap. Starting from the bottom, fold the wrap tightly, tucking in all the veggies as you would a burrito.
  10. Continue rolling until you reach the end of the wrap. Finally, cut the wrap in half, and voilà! You’re ready to enjoy your delicious Hummus Veggie Wrap.

Notes

  • Storage: If you have leftovers, store them in an airtight container in the fridge. They’re best enjoyed within a day for optimal freshness.
  • Freezing: While it’s not ideal to freeze the wraps, you can prepare the components ahead of time and store them separately for quick assembly later.
  • Pairing: These wraps pair wonderfully with a side of fruit or a light yogurt dip for added flavor.
  • Variations: Feel free to play with the ingredients! Add roasted veggies, a drizzle of balsamic glaze, or even some feta cheese for different flavor profiles.
  • Presentation: For a beautiful presentation, slice the wrap diagonally and serve with colorful sides.
