Ingredients

  • 4 pieces Boneless skinless chicken breasts
  • 1 cup Store-bought Italian flavored marinade
  • 1/2 cup Peeled, diced English cucumber
  • 2 pieces Roma tomatoes diced
  • 8 pieces Basil leaves torn or chopped
  • 1/4 cup Parmesan cheese shavings
  • 1/8 teaspoon Minced garlic (optional)
  • 1 teaspoon Good quality balsamic vinegar
  • Salt & pepper to taste

Equipment

  • Wooden Spoon
  • Chef's Knife
  • Cutting Board
  • Peeler

Method

  1. Place the chicken breasts in a plastic container or leak-proof food storage bag with the Italian flavored marinade. Stir to coat and refrigerate until ready to grill.
  2. Preheat your outdoor grill to high. Lightly grease the grill. Place the chicken breasts on the hot grill and reduce heat to medium. Cook for about 5 minutes per side or until the chicken is cooked thoroughly.
  3. While the chicken is cooking, chop up and stir together all the ingredients for the bruschetta topping.
  4. Remove the chicken from the grill, cover with foil, and let rest for 5 to 10 minutes.
  5. When you are ready to serve, top the chicken with cucumber bruschetta. Serve immediately.

Notes

  • Storage: Store any leftover chicken and bruschetta in airtight containers in the refrigerator for up to three days. You can enjoy them cold or reheat the chicken gently.
  • Freezing: If you want to freeze the chicken, marinate it, then freeze before grilling. Thaw in the refrigerator overnight before grilling. The bruschetta is best served fresh.
  • Pairing: This dish pairs wonderfully with a light salad or grilled vegetables for a complete meal. You can also serve it with a side of pasta for a heartier option.
  • Variations: Consider adding other toppings to your bruschetta, like diced bell peppers or olives, for added flavor and texture.
  • Grilling Alternatives: If you don’t have a grill, you can achieve similar results by using a grill pan on the stovetop.
