  • 1 pound Ground Beef
  • 1 large Bell Pepper chopped
  • 28 ounces Canned Tomatoes no sugar added
  • 4 cups Beef Broth
  • 1 tablespoon Taco Seasoning
  • 8 ounces Cream Cheese softened and chopped

Method
 

  1. Add the ground beef to a large soup pot and place it over medium heat. As the beef begins to brown, you’ll notice it changing color. Stir occasionally to break it up and ensure even cooking, about five to seven minutes. Once it’s nicely browned, make sure to drain off any excess fat.
  2. Next, add the chopped bell pepper to the pot. The vibrant color of the bell pepper will brighten up the dish! Cook for about three minutes, allowing it to soften slightly.
  3. Pour in the canned tomatoes along with their juices, the beef broth, and the taco seasoning. Stir everything together and increase the heat to high. You want to bring this mixture to a rolling boil.
  4. Once boiling, reduce the heat to medium-low and let the soup simmer for about ten minutes. You’ll notice the aroma filling your kitchen, making your mouth water!
  5. Add the cream cheese to the soup. Chop it into small pieces and stir it into the soup. As it melts, it will create a creamy texture that envelops all the ingredients beautifully.
