Method
- Preheat your oven to 180C/350F and line a small baking tray with parchment paper.
- In a small mixing bowl, add your dry ingredients: coconut flour and vanilla protein powder. Mix them well to ensure there are no lumps.
- Next, incorporate the wet ingredients, including cashew butter and maple syrup. Stir until everything is well combined.
- Gradually add milk of choice until a thick batter forms. The dough should hold together but not be too sticky.
- Form two small balls and place them on the lined cookie sheet. Flatten each ball slightly.
- Bake the cookies for 8 to 10 minutes, until they look just cooked and still soft.
- Once baked, remove the cookies from the oven and allow them to cool completely on the tray.

Notes
Leftover cookies can be stored at room temperature in an airtight container for up to 2 weeks. If you’d like them to keep longer, store them in the refrigerator for up to 1 month. Place leftover cookies in a freezer-safe bag and freeze for up to 6 months.
