Method
- Bring 2 cups of water, 2/3 cup of sugar, and 1/4 cup of mint leaves to a simmer in a small saucepan. Stir until the sugar is completely dissolved. Cool and strain.
- Combine the mint syrup with 4 cups of chopped cantaloupe in a blender and blend until smooth.
- Strain through a fine mesh sieve and discard the pulp.
- Serve over ice.
