  • Pinch salt
  • 4 teaspoons honey
  • 1/2 tablespoon coconut oil
  • 2 teaspoons vanilla Greek yogurt
  • 1 1/2 tablespoons unsweetened vanilla almond milk
  • 1 tablespoon reduced-fat cream cheese
  • 1 tablespoon strawberry protein powder
  • 1 teaspoon vanilla Greek yogurt
  • to taste Truvia
  • 2 tablespoons vanilla Greek yogurt for topping
  • 2 tablespoons strawberry protein powder
  • to taste Truvia or sweetener of choice

Method
 

  1. In a medium-sized bowl, stir together the whole-wheat flour, strawberry protein powder, baking powder, and pinch of salt. Set aside.
  2. In a small, microwave-safe bowl, melt the honey and coconut oil in the microwave for about 30 seconds.
  3. Make a well in the center of the dry ingredients and pour in the melted honey, vanilla Greek yogurt, and unsweetened vanilla almond milk. Stir until smooth and well combined.
  4. Lightly spray a mug with cooking spray and pour the batter in. Microwave for 1 minute and 10 seconds, keeping a close watch to ensure it doesn't overflow.
  5. Let cool for 1 minute and stir together your choice of topping in a small bowl.
