Ingredients
  

  • 2 tablespoons olive oil
  • ½ cup chopped yellow onion
  • 2 teaspoons minced garlic
  • 3 Polish or smoked sausages
  • 1 beet greens from two large beets, washed and chopped
  • 1 cup crushed tomatoes
  • 1.5 cups chicken stock or water
  • 3 cups bowtie pasta uncooked

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped yellow onion and minced garlic. Sauté for about two minutes until the onion is translucent.
  3. Add sliced sausage and cook for another couple of minutes, allowing it to brown slightly.
  4. Add beet greens and sauté for an additional two minutes until wilted.
  5. Add crushed tomatoes and chicken stock or water. Bring to a gentle boil.
  6. Stir in uncooked bowtie pasta, making sure it's submerged in the liquid.
  7. Reduce heat to low, cover, and let simmer for about fifteen minutes, stirring occasionally.
  8. Once done, remove from heat and let it stand for ten minutes before serving.
  9. Serve hot and enjoy your meal!

  • Tip 1: You can use chicken in place of sausage or use beans for a meatless version.
