- Preheat your oven to 450°F (232°C). Make sure your oven is fully heated to ensure even cooking and a nice crispy texture.
- Wash the red potatoes thoroughly under cold water. Pat them dry with a clean kitchen towel. This step is crucial to remove any dirt that may affect the flavor.
- Next, cut the washed red potatoes into fork-sized chunks. Be careful not to slice them too small, or they may burn. On the flip side, if you cut them too large, they will take longer to cook. Aim for a size that’s just right for roasting.
- Place the cut red potatoes in a large bowl. Drizzle with the extra virgin olive oil. This will help the potatoes crisp up beautifully during roasting.
- Add in the garlic powder, chili powder, and salt to taste. Mix everything together using your hands or a spatula, ensuring that each piece is well-coated with the seasoning blend. If using your hands, it’s best to wash them beforehand!
- Prepare a large baking sheet by spraying it with nonstick spray. This will help prevent the potatoes from sticking and make cleanup easier.
- Dump the seasoned red potatoes onto the baking sheet in a single layer. Be careful not to overlap the potatoes, as this will impact their ability to crisp up.
- Place the baking sheet in the preheated oven and roast the red potatoes for approximately 20 minutes. At the halfway point, turn the potatoes to ensure even cooking.
- Keep an eye on them until they are fork tender and have developed a lovely golden color on the outside. This is when they’re at their best!

Notes
Leftovers can easily be stored for up to 4 days in an airtight container. You can freeze roasted potatoes, but they may lose some texture. To freeze, place them in a single layer on a baking sheet, freeze until solid, then transfer to a zip-top bag.
