  • 1 1/2 cups light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup white chocolate chips
  • 1/3 cup peanut butter chips
  • 1/3 cup salted peanuts
  • Sea salt for sprinkling on blondies
  • 1/2 cup candy corn

Method
 

  1. Preheat the oven to 350°F. Grease a 9-inch by 13-inch pan and set aside. This step ensures that your blondies will come out of the pan easily and won’t stick. A well-greased pan is key!
  2. In a saucepan over medium heat, melt the butter and brown sugar, stirring constantly until smooth. The mixture should be glossy and well combined. Remove from the heat, and stir in the peanut butter until creamy and combined. Let the mixture cool slightly, as you don’t want to scramble the eggs in the next step.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Make sure there are no lumps in the dry ingredients, as this will help the blondies to have an even texture.
  4. Add the eggs, one at a time, to the peanut butter mixture, mixing well after each addition. You should see the mixture becoming more cohesive and creamy. Add the vanilla extract and stir to combine. This addition will enhance the flavor of your blondies!
  5. Pour the peanut butter mixture into the prepared dry ingredients, and stir until the batter is smooth. It should be thick and creamy. Stir in the white chocolate chips, peanut butter chips, and salted peanuts. The batter should be studded with these delicious add-ins.
  6. Transfer the batter to the prepared pan, spreading it evenly to the edges of the pan. Sprinkle with a touch of sea salt. This adds a nice contrast to the sweetness of the blondies.
  7. Bake for 25 minutes and remove from the oven. Gently press the candy corn into the blondies. This step ensures that the candy corn will be slightly melted and adhere to the blondies. Put the pan back in the oven and bake for an additional 2 to 4 minutes. The top should be golden and the edges slightly browned.
  8. Remove the blondies from the oven and place them on a wire rack to cool. Once cooled, cut into squares and serve. These blondies are best enjoyed when they’re warm and gooey!
