Ingredients
  

  • 1 recipe Peanut Sauce
  • 8 ounces dried udon or rice noodles
  • 1 tablespoon tamari
  • ½ English cucumber julienned
  • 1 medium carrot julienned
  • 7 ounces extra-firm tofu cut into thin strips
  • Fresh mint, cilantro, basil, and/or Thai basil leaves for garnish
  • Crushed peanuts or sesame seeds for garnish
  • Sriracha for serving

Method
 

  1. Prepare the peanut sauce according to your favorite recipe.
  2. Bring a large pot of water to a boil. Add the noodles and cook until al dente, about five to seven minutes.
  3. Drain and rinse the noodles under cold water to stop the cooking process.
  4. Transfer the noodles into a large bowl and toss with the peanut sauce and tamari.
  5. Portion the noodles into four bowls and top with cucumber, carrot, and tofu.
  6. Garnish with fresh herbs and crushed peanuts or sesame seeds.
  7. Serve with Sriracha on the side for those who like it spicy.

Notes

Store leftovers in an airtight container in the fridge for up to three days. If the sauce thickens, add a splash of water before reheating.
