Method
- Toss vegetables with olive oil.
- Combine garlic, brown sugar, chili powder, paprika, salt, and pepper. Sprinkle over vegetables.
- Place vegetables in grill basket and grill for 15 minutes, until vegetables are tender.
Notes
- If you don’t have a grill basket: You can cook the vegetables in a foil packet. Make sure to use heavy-duty foil. I would suggest double wrapping the vegetables in foils so there isn’t any leakage.
- Vegetable Variation: Can use any vegetable combination you prefer.
- Low-Carb Option: Can omit brown sugar for a low-carb/keto-friendly dish.
