Ingredients
  

  • 1 ear corn cut into chunks
  • 1 medium red onion cut into wedges
  • 1 green bell pepper cut into chunks
  • 1 red bell pepper cut into chunks
  • 1 orange bell pepper cut into chunks
  • 1 small yellow squash sliced
  • 8 oz sliced mushrooms
  • 2 Tbsp olive oil
  • 2 garlic cloves minced
  • 1 Tbsp brown sugar
  • ½ tsp chili powder
  • ½ tsp paprika
  • ¼ tsp salt
  • ⅛ tsp pepper

Equipment

  • Charcoal Chimney Starter
  • Grilling Tongs
  • Grill Basket

Method
 

  1. Toss vegetables with olive oil.
  2. Combine garlic, brown sugar, chili powder, paprika, salt, and pepper. Sprinkle over vegetables.
  3. Place vegetables in grill basket and grill for 15 minutes, until vegetables are tender.

Notes

  • If you don’t have a grill basket: You can cook the vegetables in a foil packet. Make sure to use heavy-duty foil. I would suggest double wrapping the vegetables in foils so there isn’t any leakage.
  • Vegetable Variation: Can use any vegetable combination you prefer.
  • Low-Carb Option: Can omit brown sugar for a low-carb/keto-friendly dish.
