Ingredients

  • 1 pound radishes fresh, vibrant radishes
  • 1 teaspoon Italian seasoning adds flavor and aroma
  • ¼ teaspoon salt for seasoning
  • ¼ teaspoon ground black pepper adds a touch of spice
  • 2 tablespoons olive oil for richness and crisping

Equipment

  • sheet pan

Method

  1. Begin by washing and trimming the roots of the radishes, as well as any green leaves or stalks. This step is essential and helps prepare them for roasting. Cut them in halves or quarters to ensure even cooking.
  2. Next, spread the radishes on a sheet pan, making sure they have enough space. If they are too crowded, they will steam rather than roast, which will affect their texture. It’s crucial to arrange them in a single layer.
  3. Now, season the radishes with Italian seasoning, salt, and black pepper. Toss them with olive oil to ensure they are well coated. This step is vital, as the oil helps achieve that lovely golden roast.
  4. Set your oven to 430°F (220°C) and roast the radishes for about 20 minutes. Keep an eye on them, as larger radishes may require a bit more time. Start checking around the 15-minute mark.
  5. Once they’re crisp enough, take the Roasted Radishes out of the oven. They should have a beautiful golden color and a wonderful aroma. Serve them warm or let them cool slightly to enjoy at room temperature.

Notes

  • Tip 1: Bigger radishes might take longer to roast. Start checking after 15 minutes, and flip them to evenly roast them.
  • Tip 2: Serve with a drizzle of creamy tahini dressing.
