Ingredients
  

  • 1 - 1 1/4 cups cups popcorn kernels use the lesser for thicker caramel coating
  • 2 1/4 cups cups packed light brown sugar
  • 1 cup cup unsalted butter
  • 1 cup cup light corn syrup
  • 2 tsp tsp fine sea salt or to taste, divided
  • 1 (14 oz) can can sweetened condensed milk
  • 1 1/2 tsp tsp vanilla extract

Method
 

  1. Start by pouring the popped popcorn into two large mixing bowls or one giant mixing bowl. This will help you manage the caramel coating better.
  2. In a medium saucepan, combine brown sugar, butter, corn syrup, and 1/2 tsp of the fine sea salt. Stir these together over medium heat until the mixture is well combined.
  3. Once everything is combined, allow the mixture to come to a boil. Keep a close eye on it, stirring constantly to avoid burning.
  4. As it begins to boil, add the sweetened condensed milk, and return the mixture to a boil. Stir continuously until it reaches a temperature of 236 to 238 degrees on a candy thermometer. This step is crucial for achieving the right consistency.
  5. Once at the correct temperature, remove the saucepan from heat. Add the vanilla and, if desired, stir in the remaining fine sea salt for added flavor.
  6. Now comes the fun part! Drizzle half of the caramel over the popped popcorn. Use a spatula to toss the popcorn several times to ensure it gets coated.
  7. Next, drizzle in the remaining caramel and toss the popcorn again until it’s evenly coated. You want each piece to be enveloped in that delicious caramel.
  8. After coating, allow the popcorn to cool completely. This will help the caramel set and give it that perfect crunch.
