Ingredients
  

  • 1 ½ lbs. jumbo shrimp peeled, tails on or off
  • 3 tbsp. olive oil
  • 2 large red bell peppers cut into strips
  • 3 large jalapenos cut into strips
  • 1 large onion cut in half circles
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1 tsp. oregano
  • ½ tsp. chili powder or to taste
  • ½ tsp. sea salt or to taste
  • ¼ tsp. pepper or to taste

Method
 

  1. First, let’s make the spice mix! In a small bowl, combine chili powder, cumin, paprika, garlic powder, oregano, salt, and pepper. Make sure to mix it well so that all the spices marry together beautifully. The aroma will start to fill the air; it’s a sign that you're on the right track!
  2. Next, it’s time to prep the shrimp. Pat them dry with a paper towel to remove any excess moisture—this will help them sear nicely. Place the shrimp in a bowl and sprinkle the spice mix over them. Toss gently until all the shrimp are well-coated with those amazing flavors.
  3. Now, let’s fry the veggies! Heat 1 ½ tablespoons of olive oil in a large skillet over high heat. Add the bell peppers, jalapenos, and onions. Cook them for about four to five minutes, stirring frequently until you see beautiful char marks forming. They should become tender but still have a nice crunch. Once done, season them with a sprinkling of salt and remove them from the skillet.
  4. Time to fry the shrimp! In the same skillet, add the remaining 1 tablespoon of olive oil. Arrange the shrimp in a single layer, ensuring not to overcrowd the skillet. Fry them for one to two minutes on each side until they turn pink and opaque. They cook quickly, so keep an eye on them!
  5. Finally, it’s time to serve! Return the sautéed veggies to the skillet with the shrimp. Heat everything together for a minute, just until the veggies are warm again. Drizzle with fresh lime juice and sprinkle some cilantro on top.
