Ingredients
  

  • 12 oz smoked sausage cut into circles
  • 16 oz baby potatoes cut into halves or quarters
  • 2 medium carrots peeled and cut into circles
  • 1 medium red onion cut into half circles
  • 1 large bell pepper cut into strips
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt or to taste
  • ½ tsp dried rosemary finely chopped
  • ¼ tsp black pepper or to taste
  • 4-6 medium bay leaves

Method
 

  1. Start by preheating your oven to 400°F (200°C). This temperature ensures that everything cooks evenly and achieves that lovely, caramelized finish.
  2. In a large mixing bowl, combine the 12 oz. smoked sausage, 16 oz. baby potatoes, 2 medium carrots, 1 medium red onion, and 1 large bell pepper. Toss everything together to mix well.
  3. Drizzle 2 tbsp. olive oil over the mixture and sprinkle in the 1 tsp. garlic powder, 1 tsp. paprika, 1 tsp. salt, ½ tsp. dried rosemary, and ¼ tsp. black pepper. Toss once more until everything is evenly coated.
  4. Divide the mixture into 4 or 6 equal parts. This will help them cook evenly in the foil packets.
  5. Take the 4-6 medium bay leaves and place one on top of each portion of veggies and sausage.
  6. Wrap each portion tightly in aluminum foil, making sure to seal it well to keep in all the juices during cooking.
  7. Arrange the foil packets on a baking sheet and place them in your preheated oven. Bake for 50 to 60 minutes. You’ll know they’re done when the potatoes are fork-tender and everything is heated through.
  8. Once done, carefully unwrap the packets (watch out for steam!) and transfer the contents to a serving platter. You may want to garnish with some fresh parsley for a pop of color and flavor.
