  • 1 tablespoon Honey
  • 1 teaspoon Coconut Aminos
  • 1 tablespoon Lime Juice divided
  • 1 pinch Fine Sea Salt
  • 1 pinch Black Pepper
  • 1.5 pounds Boneless Skinless Chicken Breasts
  • 1 cup Strawberries diced
  • 1/4 cup Red Onion finely diced
  • 1/2 cup Cilantro sliced

Method
 

  1. Begin by preparing your mango. Take one large mango and scoop out the flesh from one half. Place the flesh in a blender and puree until smooth. This will be the base of your marinade.
  2. In a large mixing bowl, combine the mango puree, 1 tablespoon of honey, 1 teaspoon of coconut aminos, 1 tablespoon of lime juice, and a generous pinch of sea salt and black pepper.
  3. Next, take 1 and 1/2 pounds of boneless, skinless chicken breasts and add them to the bowl. Coat the chicken thoroughly with the marinade. For the best flavor, let the chicken marinate for at least 30 minutes or up to 8 hours in the refrigerator.
  4. When you’re ready to cook, preheat your grill to a medium-high heat. The grill will add that beautiful char flavor that is essential.
  5. Remove the chicken from the marinade and shake off the excess. Grill the chicken for about 10 to 12 minutes on each side or until it reaches an internal temperature of 165 degrees Fahrenheit. Keep an eye on it; cooking times may vary based on the thickness of the chicken breasts.
  6. While the chicken is grilling, prepare the salsa. Dice the remaining half of the mango and place it in a bowl. Add 1 cup of diced strawberries, 1/4 of a finely diced red onion, and 1/2 cup of sliced cilantro.
  7. To the bowl, add the remaining 1 tablespoon of lime juice along with a pinch of sea salt and black pepper. Toss everything together until well combined. This salsa will be the perfect topping for your chicken!
  8. Once the chicken is done, remove it from the grill and let it rest for a few minutes. This helps the juices redistribute, keeping the chicken moist.
