  • 2 cups chopped strawberries, divided
  • 1 1/2 cups unsweetened vanilla almond milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup pure maple syrup
  • 1 1/2 teaspoons vanilla extract
  • Sliced strawberries, for topping

Method
 

  1. Preheat your oven to 350 degrees F. Grease an 8×8-inch baking pan with cooking spray and set aside.
  2. In a large bowl, combine the old fashioned oats, baking powder, and kosher salt. Set aside.
  3. Place 1 cup of chopped strawberries and the unsweetened vanilla almond milk in a blender. Blend until smooth.
  4. Pour the milk over the oat mixture. Add the melted butter, eggs, maple syrup, and vanilla extract. Stir until well combined.
  5. Fold in the remaining 1 cup of chopped strawberries.
  6. Pour the mixture into the prepared pan. Top with sliced strawberries.
  7. Bake for 35 to 40 minutes or until the oats are set and lightly golden brown.
  8. Remove from the oven and let cool in the pan for 5 minutes. Cut into squares and serve.
