  • 2 cups Strawberries hulled and diced
  • 1 teaspoon Lemon juice
  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • ½ cup Sugar granulated
  • ½ teaspoon Salt
  • 8 tablespoons Butter unsalted
  • 2 medium Bananas
  • cup Milk
  • 1 tablespoon Orange zest or lemon zest
  • 1 teaspoon Vanilla extract

Method
 

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Clean and chop the strawberries, placing them in a bowl and adding the lemon juice over them.
  3. In a large bowl, mix the flour, baking powder, sugar, and salt.
  4. Cut in the butter until the mixture resembles coarse crumbs.
  5. In another bowl, mash the bananas and add the milk, orange zest, and vanilla.
  6. Combine the wet and dry ingredients, folding in the strawberries gently.
  7. Scoop out the dough onto the baking sheet, leaving space between each cookie.
  8. Bake for about 25 minutes or until golden, then cool on a wire rack.
