Ingredients

  • 1 oz freeze-dried strawberries about 1 cup
  • ½ cup unsalted butter softened
  • 2 cups powdered sugar divided
  • ½ tsp vanilla extract
  • tsp salt
  • 2 tbsp milk 2% or whole, divided

Equipment

  • KitchenAid Stand Mixer (Premium 5 Quart Tilt-Head)

Method

  1. Prep the strawberries: Add the freeze-dried strawberries to a plastic bag and use a rolling pin to crush them into a fine powder. (A food processor works too if you want to save time!)
  2. Mix the base: In a large bowl, use a hand mixer or stand mixer to blend the softened butter, 1 cup of powdered sugar, vanilla extract, and salt until smooth.
  3. Incorporate the strawberry powder: Scrape down the sides, then gradually add the remaining powdered sugar and the strawberry powder, mixing as you go. Stop to scrape down the sides as needed.
  4. Adjust the texture: Slowly mix in the milk, one tablespoon at a time, until the frosting reaches your desired consistency. You might not need all the milk, so add it gradually.
  5. Frost and enjoy: Spread the frosting onto a completely cooled cake. Slice, serve, and enjoy every bite of this sweet, berry-packed treat!

Notes

  • Tip 1: One batch of frosting is enough for about a dozen cupcakes or a 9×9 square or round cake.
  • Tip 2: You can double or triple the recipe as needed.
